I have been talking with a few different people that have some of the same conditions as I suffer with but they do not eat gluten free. The most recent is another flight attendant with Lupus who believes that she is not affected by what she eats. I did tell her what I have found and why I try not to eat gluten.
So, what if these conditions are not 100% of the time affected by gluten intake? Why is it that I can eat some gluten and not seem to feel any consequences, while a person with Celiac disease would become terribly ill?
Well, tonight I went
to eat with my crew. I thought that Chinese would be better for me than the pizza place. Not so much. When we walked into the restaurant, my eyes were fixated on an entire pan of freshly folded Crab Rangoon! Oh the dilemma. I ordered steamed rice with chicken and broccoli, wonton soup and an order of the “crab puffs”. I decided that I would use this as a trial too and see what happens. That’s the most gluten I’ve had in a week. Count in the 1/2 of 1/3 of a bagel I had this morning and that single Twix bar and it’s possible overload.
I wonder if RLS has anything to do with gluten? About half an hour after I ate (as soon as I got back to the room thank goodness) I had to run straight to the bathroom. Not sure if it was all of the fried “goodness” I had for dinner or what it was that was fried? I am also pretty much dancing right here in this chair just trying to write! I cannot wait to get back home and drink an entire glass of Mangosteen juice. Tomorrow, if I do not wake up with a headache or in complete and utter pain, I will have to do further research on myself. I still think that I feel better without it though.
